This simple sauce is a basic building block of many baked pasta dishes, most notably Lasagna alla Bolognese. In that case it’s paired with a ragù, but besciamella is perhaps most often used for white baked pasta when a substitute is needed for tomato. With a tangy taste but a relatively low fat content, it adds creamy texture without dulling the flavor of other ingredients.
