It’s really worth investing in a cherry pitter for this jam. If you don’t have one, you can crush the fruit with a potato masher and then scoop out the stones as they float to the surface in the cooking jam, but there are always some that will escape your eagle eye and add a surprise crunch to your morning toast. Use acid or duke cherries for this jam, which has a deliciously tart, fabulous cherry flavour.
