Cooking blueberries really brings out their flavours and superb deep blue colour, but for a conserve you do this for a shorter time than for a jam. Blueberries also lend themselves very well to floral and lemon flavours, as in the variations in the box, below.

Ingredients

  • 450 g/1 lb blueberries, de-stalked

Method

  • Put the fruit in a large ceramic or glass bowl, then add 225g/8oz of the sugar, the lemon juice and salt. Stir everything together well.
  • Cover and leave to stand at room temperature overnight (up to 24 hours). Stir the mixture whenever you remember (putting the bowl near the kettle helps!).
