Refrigerator jam is exactly what it says on the jar – it relies on the chilling of the refrigerator for part of its set and preservation, and therefore contains less sugar. It doesn’t keep as long as more conventional jam, so the quantities are deliberately low here. I like to make some refrigerator jam for immediate use, then some other jam to see me through the winter. Though raspberries and strawberries work best, you can also make refrigerator jam with blackberries or hybrid berries.
