Carrots make a delicious sweet jam, especially from fresh roots that still have most of their natural sugars. (The longer the time since harvesting carrots, the greater the proportion of the sugars that will have been converted to starch.) When lightly spiced with cinnamon, ginger and orange – the classic carrot cake flavourings – carrot jam is delicious on a brioche bun, with cream cheese.
