  • 1 lb (500 g) fresh salmon fillet, quartered
  • 2 tablespoons soy sauce

Method

  1. Place the salmon fillets in a large baking pan. Combine the soy sauce, mirin and saké in a small bowl and pour over the salmon to marinate for 10 minutes. Drain the salmon and reserve the marinade.
  2. Heat the broiler and brush the rack lightly with oil. Place the salmon on the rack, skin side up, and brush it lightly with the reserved marinade. Grill the s
