Soft tofu is widely available, and the preparation of this simple classic is so easy. This dish is perfect for serving on a warm day and makes a wonderful light lunch with a salad or as an appetizer (as it is served in Japan). Young children love it too, since the tofu is soft and the taste mild. Soft tofu was my daughters’ favorite food from the moment they started eating solids.
