A creamy interior and crispy coating make this fried tofu, paired with a salty-sweet-gingery sauce, a great appetizer. Use soft tofu and take the time to drain it before frying, as that will make it easier to work with. Firmer tofu can be used, but will be less delicate.

Ingredients

  • 1 package (14 ounces) soft tofu
  • Cornstarch for dusting
  • Canola or other

Method

  1. Carefully remove the tofu from its package and cut it into 4 equal pieces. Place several layers of paper towels on a cutting board and place the tofu in a single layer on the towels. Top each tofu quarter with several paper towels, then top with a plate and a weight, such as a can of tomatoes. Let drain for 15 minutes, then very carefully replace all of the paper towels
