Another great recipe for the grill, this dish can be cooked as described here or yakitori style by cutting chicken into small pieces and threading them onto skewers. Serve as a main course with rice and green salad or with potato or macaroni salad.

For the Marinade

  • 1 tablespoon soy sauce
  • ½ teaspoon sugar
  • 1

Method

  1. To make the marinade, in a shallow bowl large enough to accommodate the chicken in a single layer, stir together the soy sauce, sugar, mirin, sake, and ginger.
  2. Add the chicken, turn to coat evenly, and let stand at room temperature for 15 minutes or up to 2 hours in the refrigerator. Prepare a medium fire in a charcoal or gas grill, or preheat the broiler.
