Found at yatai and on izakaya menus, this dish calls for only the simplest of ingredients and techniques. It is a terrific appetizer, and is perfect for casual parties. At my house, I use the largest, freshest chicken wings I can find, salt them liberally, and grill them until they are crispy and smoky but still juicy. I can’t wait until they cool, and burn my tongue every time!
