This very homey recipe is a wonderful entry point to contemporary Japanese home cooking. Amasu literally means “sweet vinegar.” These tasty little meatballs, made here with chicken, can also be made with ground pork or ground beef. Serve them as a main course, or make them for your next party and serve them, speared with toothpicks, at room temperature as appetizers.
