This dish was inspired by a bento I ate on a train ride in southern Honshu, Japan’s main island. At one station, we found a terrific array of bento boxes, and nearly missed the train as I agonized over which one to try. I picked the iridori and spent the next few hours trying to decipher the ingredients so I could re-create it at home.
