The recipes for this favorite home-style meat-and-potato stew vary widely. Everyone’s mother has a “secret” recipe, and the taste can be quite different from region to region and even house to house. This recipe combines my mother-in-law’s version with a few embellishments to satisfy my family’s tastes.

  • ½ pound beef sirloin
  • 1 tablespoon rice vinegar or white vinegar

Method

  1. Freeze the beef for 1 hour before very thinly slicing it (almost shaving it).
  2. Add the vinegar to a large bowl of water. Peel the potatoes and cut each into 8 equal chunks. Immediately immerse the potatoes in the vinegar water to prevent darkening. Rinse and drain the potatoes just before using.
