Chicken and Beef Soup

Chicken soup can be found throughout Jewish cooking. My mother makes this wonderful version, mixing chicken with beef, for the special, sizeable meal we have before the Yom Kippur fast, and again afterwards to break the fast. For my family in Rome, it’s a special once-a-year soup, whereas many Ashkenazi Jews will have chicken soup every Friday night for their Shabbat meal.
