Passover ‘Imperial’ Soup

Imperial soup, which has another, equally elevated name, zuppa reale or royal soup, is a typical dish from the Emilia Romagna region, and is also found in Le Marche on the Adriatic Coast. It is a rich first course of cheesy semolina cubes in a meat broth, which Italians often serve at Christmas. The Jews of these regions substituted matzah meal and olive oil for the non-kosher mix of ingredients, turning it into a perfect dish for their annual Passover family meals.
