This is a delicious and super-quick pasta dish which I sometimes make for lunch. Spaghetti con la bottarga is often found on kosher restaurant menus in Rome, where it’s almost as common as it is in Sicily and Sardinia. I like to think that perhaps the Jews of the southern islands took cured fish roe with them when they were forced northwards at the time of the Spanish Inquisition, which is how this dish ended up being part of the Roman Jewish repertoire. Mullet and tuna
