This Tuscan classic is cucina povera at its best, one of those ‘poor food’ peasant dishes that makes sure nothing is wasted. It is ideal when you have stale ends of bread that are too hard to eat (sourdough or ciabbata are ideal, but any other bread is also good, except challah), preferably kept in a paper bag or closed basket.
