It is a tradition in my family to eat this frittata for lunch before Passover, in the hours before it starts, when neither bread nor the festival’s unleavened bread (matzah) are permitted. Potatoes are a good substitute for both.

The recipe comes from my namesake, my maternal great-grandmother Silvia, whom I never had the pleasure to meet but my mother adored. My mum still makes this frittata every year, and until recently she used the same iron pan her Nonna used,
