Did you know that there is a ‘male’ and ‘female’ fennel? The male is rounder, more tender and ideal for eating raw, and the female is more slender and a bit tougher, so is usually cooked. The smaller the fennel, the more tender, especially the female. For this recipe, look for long and ideally smallish female fennel, or round male ones cut into slices or quarters.
