Nonna Bianca’s Lemon Sponge

This lemon sponge is such a classic in our family and is probably the cake I bake most frequently. My late paternal grandmother, Nonna Bianca, used to bake it weekly, either for her fabulous Thursday lunches at her home or for Friday night Shabbat dinner when she came over to ours.
