This is my adaptation of a fascinating old recipe from Florence’s Jewish community which I first came across in La Cucina nella Tradizione Ebraica by Adei Wizo (Association of Italian Jewish Women). I add more egg whites than in the original recipe to make it a little lighter. The cake is unusual and versatile as it has both sweet and savoury elements.
