White peaches (or white nectarines) are delectable, and at their best in this simple but ethereal dessert.
Halve the strawberries and put them into a food processor with the orange juice and caster sugar to taste. Whizz to a purée and then rub through a sieve into a bowl.
Shortly before eating, put the peaches into a bowl and pour boiling water over them. Leave for half a minute, then remove the peaches and peel off the skin. Slice them in thin half-moon slices, sprinkling the slices with lemon juice as you do so. Then spoon the strawberry and orange purée on to individual plates and arrange the peach slices in a neatly overlapping circle on top. Dust the peaches with
