You can actually buy peach tea, which gives this ice-cream its unique flavour. However, if you cannot find any, use an aromatic and floral China tea like jasmine.


  • 6 ripe peaches
  • 1 tsp peach tea
  • 2 tbsp caster sugar
  • ½ quantity (500ml/16 fl oz) Vanilla Ice-cream


    Mise en Place

    Put 300ml/½pt of water to heat for the tea • Meanwhile, quarter the peaches. Skin them, detach from the stones and cut into wedges • When the water is boiling make the tea and add the sugar. Leave to cool in a bowl until just warm, then infuse the peach wedges in the tea for 1 hour.
