Ingredients

For the chicken salad

  • 10 chicken thighs, bone-in and skin on
  • 4 slices sugar-free bacon, cooked and chopped
  • Juice of ½

Method

For the chicken, Preheat oven to 400°F. Place the chicken thighs on a sheet tray and season with a drizzle of oil and a generous pinch of salt and a few cracks of pepper on both sides. Place the chicken skin side up and
