This recipe is all about comfort food in a hurry. I was late to the electric pressure cooker party, but I now see what all the fuss is about. The chicken gets incredibly tender and falls off the bone in only 10 minutes of cooking time.
Preheat the electric pressure cooker to the highest sauté setting and season the chicken drumsticks with a generous pinch of salt and pepper on all side. Add 1 tablespoon of oil to the pot along with half of the chicken. There should be room for 5 drumsticks at one time. Sear for 3–4 minutes on both sides or until golden brown. Remove chicken from pot and sear the second batch.
