Not that meatloaf needed any help in the flavor department, but it can’t hurt when it’s stuffed with mozzarella cheese and prosciutto and baked in the oven. Served with a funky little side dish that has Japanese eggplant, broccolini, crispy garlic, and shallots. So good!
