No starchy filler needed for this veggie-loaded turkey meatloaf with a classic (sugar-free) ketchup glaze. I’ve been told many kids have been fooled by this meal, thinking they were eating beefy meatloaf and rice! And, of course, their parents didn’t tell them any different!

Ingredients

For the meatloaf

  • ½ onion, finely chopped
  • 2 stalks of celery, diced
  • 1 green bell pepper

Method

For the meatloaf, preheat oven to 350°F. Preheat a large pan over medium heat with 1 tablespoon of olive oil for 2 minutes. Add the onions, celery, green peppers, dried thyme, ½ teaspoon salt, and a couple crack of black pepper.
