These spice-crusted lamb shoulder chops have lots of flavor and cook up just like a steak. The chops are served with a creamy and crunchy Mediterranean green bean salad that Zeus himself would approve of.
Make the spice rub for the lamb shoulder chops by combining the smoked paprika, cumin, oregano, cayenne, and cinnamon in a small bowl and mix well. If making ten chops, you will need to double the spice rub quantities. Season the lamb chops with a generous pinch of spice rub and salt on both sides. Let the chops sit at room temperature for 20 minutes so the marinade can infuse flavor.
