I made this recipe on the FlavCity Instagram story recently and one lady asked me how this can have any flavor since it’s only water and lemons! The answer is simple: Zastroika! That’s the Bulgarian technique of tempering eggs and lemon to add a rich and creamy flavor to the soup and give it some body. It’s such an easy recipe, but, on a cold day, it’s exactly what you need.
