IF YOU CANNOT FIND FRESH POLLOCK, USE WHITE LEAN FISH, SUCH AS COD AND SAITHE. IF YOU CUT DOWN A LITTLE ON THE PARSLEY BUTTER, THIS BECOMES A LEAN, HEALTHY DISH.
