THIS IS PROBABLY THE EASIEST WAY TO SERVE POLLOCK, AND IF YOU HAVE VERY FRESH FISH, IT IS ONE OF THE BEST, PRESERVING ALL THE FLAVORS OF THIS UNDERRATED AND GENERALLY INEXPENSIVE FISH. IF YOU CANNOT FIND FRESH POLLOCK, USE WHITE LEAN FISH, SUCH AS COD AND SAITHE. IF YOU CUT DOWN A LITTLE ON THE PARSLEY BUTTER, THIS BECOMES A LEAN, HEALTHY DISH.
