  • 1 tablespoon finely chopped fresh mint leaves
  • ½ teaspoon coarse sea salt

Method

Place the mint in a mortar or a small bowl. Add the salt and lightly crush the mint and salt with a pestle or the back of a wooden spoon. Add the lemon juice, sugar, and yogurt. Season with pepper to taste. (The sauce can be made up to 24 hours in advance; cover and refrigerate.)
