  • 1 cup coarsely chopped pickled beets
  • ¼ cup chopped dill pickles (pickled gherkins)

Method

Combine the beets, pickles, apple, horseradish, and sour cream in a medium bowl, mixing well. Add apple cider vinegar to taste, which depends on how sour the pickles are. I seldom use more than 1 to 2 teaspoons.

The Beet Salad is not really a salad, but rather a sweet-and-sour condiment.
