MASHED RUTABAGA IS SERVED WITH MANY TRADITIONAL NORWEGIAN DISHES, INCLUDING LAMB, GAME, AND SALT-CURED FISH. ALTHOUGH LESS INTENSE IN FLAVOR, IT HAS A SWEETNESS THAT RESEMBLES SWEET POTATOES.

In a large pot, combine the salt and 3 quarts water and bring to a boil over high heat. Add the rutabaga, carrots, and potatoes and cook over medium heat for 25 to 35 minutes, or until the rutabaga is soft. Drain well.
