WILD MUSHROOMS OFTEN HAVE SOIL ON THEM, BUT THEY SHOULD BE CLEANED WITHOUT WATER, PREFERABLY WITH A DAMP CLOTH OR SOFT BRUSH. NEWLY PICKED MUSHROOMS CONTAIN A LOT OF WATER. IF YOU ARE USING OLDER MUSHROOMS, YOU MAY NEED MORE BUTTER. YOU COULD ALSO ADD A FEW TABLESPOONS OF WATER.

THIS IS A SIMPLE DISH THAT GOES WELL WITH ALMOST EVERYTHING: FRIED FISH, POULTRY, MEAT, AND GAME.
