Lotus root looks pretty homely when whole, but peel, thinly slice and fry them up, and they transform into beautiful lacy (and tasty!) chips. I like to serve them with Krazy Korean Burgers, Spicy Tuna Tartare and Steak Tartare. When purchasing lotus root, look for ones that are firm, smooth and unbruised.
