This recipe fulfills my fantasies—food fantasies, that is. Some folks like their fish slightly undercooked or even raw. I’m more than happy with a piece of charred fish. The corner piece that’s been overcooked with the crispy skin is what I go for. And I also love spicy food—the spicier, the better. So you need to know that this recipe may not be for everybody (definitely not for kids). But if you like the sound of overcooked char served atop sticky rice noodles, all doused with a burning w
