When you’re short on time and want a quick, light meal, rice bowls are a great way to go. Simply steam white or brown rice, scoop it into bowls, arrange cooked sliced chicken, beef, fish, or tofu over the rice, and then spoon this spicy, fresh-tasting, flavorful slaw on top-dinner in no time, served with a spoon! This recipe is also a good template for how to use up leftover rice and/or whatever protein you may have in the fridge.
