Keep this condiment handy, as it pops up in so many recipes. It will keep in an airtight container in the fridge for 8–10 days, or indefinitely in the freezer.

Ingredients

  • 100 g ( oz) Indian green chillies
  • ½ teaspoon salt

Method

Wash the chillies well and remove the stalks. Grind the chillies to a paste, using a mortar and pestle, then mix in the salt, mustard oil and lemon juice.
