Keep this condiment handy, as it pops up in so many recipes. It will keep in an airtight container in the fridge for 8โ€“10 days, or indefinitely in the freezer.

Ingredients

  • 100 g (3ยฝ oz) Indian green chillies
  • ยฝ teaspoon salt
  • 2 teaspoons mustard oil
  • 2 teaspoons lemon juice

Method

Wash the chillies well and remove the stalks. Grind the chillies to a paste, using a mortar and pestle, then mix in the salt, mustard oil and lemon juice.
