Method

Grind together 1 tablespoon black mustard seeds, 1 tablespoon yellow mustard seeds, 2 chopped green chillies, 1 teaspoon sugar and 375 ml (13 fl oz/ cups) water. Season to taste with salt. The temperature of the water determines the spiciness of the paste; cold water produces a hotter flavour.
