The first time I had a mango lassi I was listening to Bob Marley and eating a banana pancake. Everything seemed right with the world. It was amazing. I still make mango lassis all the time — they are such a refreshing and healthy way to start the day.

Ingredients

  • flesh of 3 ripe mangoes, or 2 cups frozen mango slices
  • 95 g

Method

Add the mango, buffalo curd, milk and sugar or salt to a blender. Pulse, then blend for 2 minutes, until the mixture is thick but not runny.

Adjust the sweetness or saltiness to taste. Add a squeeze of lime juice and blitz again.

Add some ice cubes or crushed ice to two glasses. Pour in the lassi mixture and serve each with a slice of lemon.
