I can’t publish this recipe without mentioning the person who gave it to me: my friend Dharshan Munidasa, restaurateur and co-owner of three of Sri Lanka’s most famous restaurants, Ministry of Crab, Nihonbashi and Kaema Sutra, two of which are rated in Asia’s top 100 restaurants.

Make this healthy, energising drink part of your morning ritual. It is simple to prepare and so nutritious. There is really no substitute for a fresh king coconut, because of its amazing flavour; the next best option is to use a good coconut water that still contains some of the coconut flesh, although the flavour will never be the same.

Preparation 10 minutes


  • 1 thambili (orange-shelled king coconut) with the flesh, or 300 ml (10½ fl oz) coconut water with flesh
  • juice of 1 lime
  • 2 cm (¾ inch) knob of fresh ginger, peeled
  • ½ cup vitamin-rich green herbs, such as pennywort, flat-leaf (Italian) parsley or kale


Place all the ingredients in a blender and whiz together until thoroughly combined.

Strain into two glasses and serve immediately.
