The herbs chosen for this salad are all traditional and have been combined in salads since the sixteenth century.


A selection of fresh herbs such as

  • purslane
  • lovage leaves
  • tarragon
  • fennel flower
  • beet greens


  1. Rinse and trim all the herbs.
  2. Set the larger leaves in a dish and arrange the rest on top to make an attractive display.
  3. Prepare the vinaigrette. Serve it separately or toss the salad in it.
