Mix all the ingredients for the cooked marinade in a large bowl. Add the meat and turn it so it is completely covered. Marinate up to 2 days. A raw, concentrated marinade for the same quantity of veal may be made by substituting ⅔ cup/150 ml cognac and 2/3 cup/150 ml
