  • 3 tbsp/45 ml white wine vinegar

Method

  1. In a small heavy pan, boil the vinegar, wine and shallots to a glaze. Add the cream if using and re-boil to a glaze.
  2. Mount the sauce with the butter. Over a high heat, bring the sauce just to a boil, whisking constantly.
