Beer makes a crisp, all-purpose batter for fruit and vegetables such as apple rings and sliced bananas.


  • 1 lb/500 g peeled fruit such as apple or pineapple, cut in rings, pears or peaches, cut in wedges, or bananas, diagonally sliced


  1. To make the batter: sift the flour and salt into a bowl and make a well in the center. Add half the beer with the whole egg and stir, gradually drawing in the flour to make a smooth paste. If too much liquid is added at this point, the batter will form lumps. Add the remaining beer, cover and leave ½ to 1 hour. It will thicken on standing.
