Method

Trim the ends and sides of the potato and cut into the finest possible slices, then into fine strips about 3 in/7.5 cm long. Fry once at 375°F/190°C, 2-3 minutes until light golden. American shoestring potatoes are similar to straw potatoes, but longer.
