Trim the ends and sides of the potato and cut ¼ in/6 mm sticks about 3 in/7.5 cm long. Fry once at 325°F/160°C, 5-6 minutes until tender and just starting to brown. Drain and let cool. Fry again at 375°F/190°C, 1-2 minutes until crisp and brown. Straight-cut potatoes (Fr. pommes Pont Neuf): Trim the ends and sides of the potato and cut into ½ in/1.25 cm sticks, 3 in/7.5 cm long. F
