Savory baked beans are simmered in the oven until meltingly tender. Use a large pot to allow for expansion.


  • 1 lb/500 gpiece of salt pork or slab of bacon, skin scored
  • 2 ½ c


  1. Heat the oven to 250°F/120°C. Cut a slice of salt pork or bacon and lay it in the casserole. Add the beans and remaining salt pork or bacon and boiling water to cover. Bake the beans, covered, until tender, 3-4 hours, adding more water as it is absorbed.
