Flat, soft-crumbed focaccia is brushed with oil and sprinkled with flavorings such as herbs or nuts. The extra dose of yeast in the recipe gives the bread a particularly zesty lightness.


  • 2 lb/1 kg flour (more if needed)
  • 2 tsp pepper


  1. Sift the flour with the pepper on to a work surface and make a well in the center. Add the water and oil to the well, sprinkle the yeast over and leave for 5 minutes or until dissolved. With the fingers of one hand, gradually mix the flour into the yeast mixture to make a paste. With a pastry scraper or metal spatula, work in the remaining flour and gather the dough into
