Ingredients

  • 3 ½ cups/500 g confectioners’ sugar
  • 2 egg whites

Method

Sift the confectioners’ sugar. Beat the egg whites until frothy and beat in the sugar a tablespoon at a time. Beat in the lemon juice and continue beating at least 8 minutes until the mixture forms soft peaks.
